If the beautiful, diverse and historic land of Italy has brought one boon to cold, civilised British life, it's pasta. Of the many hundreds -if not thousands- of shapes, we Brits have our favourites. There is one underlying aspect of this curios staple, however, that we can all agree differentiates the good from the bad and the bad from the ugly.
The Italians will laugh at this. Such a simple tenet of everyday life to an Italian becomes a revelation in food for us, the uninitiated. I'm referring, of course, to the use of freshly made pasta, as opposed to the dry, manufactured stuff we've grown up enjoying. "But" I hear you ask; "which pastas should we cook from fresh, and which from dry?" and; "how does one produce all those shapes and sizes?"
